Hummus Pasta Sauce

What you need: 

2 tablespoon roasted red pepper hummus
1 roasted red pepper (or one serving from a jar)
1 clove garlic
1 tablespoon vegetable stock
pepper to taste

What you do: 

In a food processor, combine all ingredients and blend until smooth. You may need to add extra broth to get the right consistency.
You can either heat the sauce in a saucepan or in the microwave on medium power for about one minute and then toss with your favorite paste (I use whole wheat penne) and enjoy!

Oh, also I threw in a handful of fresh parsley, which definately enhanced the flavor of the sauce!

This was so easy and tasty! We added a bit more hummus and about a tablespoon of vegan cream cheese, and roasted a fresh red pepper. I am a complete hummus addict; I literally have it every day, and this is a great way to mix things up. :D. I can tell already that i will be making this frequently. Great recipe. My boyfriend went nuts over it.
