Homemade Tomato Sauce

What you need: 

1 onion, roughly chopped
1 carrot, peeled and chopped
1/4 cup olive oil
1/2 green pepper, chopped
1/2 red pepper, chopped
6 plum tomatoes, roughly chopped
2 tablespoon tomato paste
2-3 cloves garlic, finely chopped
salt, to taste
pepper, to taste
all of your favourite spices, to taste*

What you do: 

In a sauce pot, throw in oil. Heat and add onion and carrots. Cook up until they start to soften at medium heat. Throw in the peppers and cook up until they get a bit softer too.
Lower heat and let 'er all simmer down and get nice and soft. You can put on a lid if you feel like it, but it's fine without. Stir occasionally.
When it's all good and soft and yummy and mixed, add the garlic. Let that simmer for about 5 minutes or less. Then throw in the tomatoes and the tomato paste. You can add the salt and pepper here too and your desired spices.*
Cook that down for a few more minutes. Let the tomato break down and get nice and mushy, stirring occasionally.
Transfer to a food processor and blend away. When it's good and blended push through a sieve or a small-holed strainer. You may have to do this in steps. Reheat in the microwave or on the stove for a few minutes to serve.**
*Spices: I like to add hot-sauce, crushed fennel seed, cinnamon, cocoa powder and bit of lemon juice. Play with it and make it your own. You could add basil, parsley, cumin, coriander, caraway, even chopped spinach.
**Serve: with your favourite noodles, broccoli, mushrooms, veg meat, tofu, textured soy protein, seitan, tempeh, garlic bread, veg cheese...MMMmmm!! Anything you want!!
