Hokey Pokey

What you need: 

5 tablespoons white sugar
2 tablespoons golden syrup (could use corn syrup but it won't be authentic)
1 teaspoon baking soda (bicarbonate of soda)

What you do: 

1. Line a container or dish with non-stick paper. 2. Put sugar and golden syrup in a heavy-based saucepan. Bring to the boil slowly, stirring constantly to dissolve the sugar. Simmer for about 3 minutes; stir occasionally to stop it catching.3. Remove from heat, and add the baking soda and stir quickly-- the mixture will foam up.4. Pour onto the non-stick paper and leave to set and cool.5. Break into pieces to eat. (It is very good crumbled over vegan vanilla ice-cream.)
Keep leftovers in an airtight container.

SO HOW'D IT GO?

Where I grew up this was known as Seafoam Candy. You can use molasses if you can't get golden syrup. I wonder if brown rice syrup (a healthy exchange for corn syrup) would work?

Finally i know what this candy is! I used to buy this at the candy store when i was very young but since the store had everything labeled by nicknames i could never get my hands on what it was. Im so thrilled to find it and have all the ingrediens for it, will update once ive made it :D!
