High Calcium Soup

What you need: 

1 large cauliflower
1 cup chopped carrots, pumpkin, potatoes each
1 cup silken tofu
1 cup ground up almonds
1 leek
1 small onion and as much garlic as you like
2tablespoon margarine
soy milk/rice milk or a mixture of both

What you do: 

Lightly fry onion, garlic and leek until soft. In a large pot simmer all other veggies and tofu in soy/rice milk until soft ( use enough to completely cover veggies ) Once soft add everything to pot and use a hand held blender and blend until smooth. Add salt and pepper to taste and serve with hot crusty whole-wheat vegan bread.
For more nutrition you can add 1/2 cup of a mixture of ground hazelnuts, linseeds and sesame seeds. This soup has lots of calcium.
