Herby Roasted Potatoes

What you need: 

6 medium red potatoes, sliced 1/2" thick
1/4 cup olive oil, divided
1 tablespoon balsamic vinegar
1 teaspoon rosemary
1 teaspoon sage
1/2 teaspoon salt and pepper

What you do: 

1. Preheat oven to 400 degrees F. Place potatoes in mixing bowl. Drizzle in the vinegar and 1/2 the oil.
2. Grind the seasonings in a spice or coffee grinder and sprinkle over the potatoes. Mix well.
3. Drizzle the remaining olive oil on a cooking sheet and spread the herby potatoes over the sheet.
4. Bake 35 minutes total (or until tender) but stir up the wedges every 10-15 minutes so they cook evenly.
