Herby Butter Bean and Potato Mash
6 to 8 small to medium new potato
1 - 15 ounce can butter beans, rinsed
2 cloves garlic, roughly chopped
Salt and pepper
herbs (dried or fresh) - parsley and chives are good
Vegan margarine, to taste
1) In a large pot, combine potatoes, garlic and butter beans and cover with water. Bring to a boil and cook for 15 mins or so, or until potatoes are tender. Drain and return to pot.
2) Mash together, adding the margarine, herbs and seasoning according to taste.
I usually add both dried and fresh herbs, depending on what I've got to hand, I just usually go with how green or herby I want it to be really.
