Heavenly Breakfast Quinoa

What you need: 

1/2 small banana
2 teaspoons peanut butter
1/2 cup quinoa, cooked
1 tablespoon flax seeds, ground
few splashes nondairy milk (I use soy)

What you do: 

1. Mash the banana right in your breakfast bowl with a fork and then stir in the peanut butter.
2. Stir in the quinoa and flax seeds and then add milk, to taste.
This can be eaten cold or hot. I make up a pot of quinoa at the beginning of the week and I get excited about eating this for breakfast every day. Nothing like a little fiber, protein, whole grain start to a day!

SO HOW'D IT GO?

loves it! i made a big pot of this at the begining of the week, as suggested, and it has been the BEST breakfast ever. i used rice milk instead of soy and add dried mixed berries and it really gets me going for the rest of the day. yum!

Very good and filling breakfast. Had it for the first time today. I don’t know about “heavenly” though, but it was still delicious. The peanut butter gave it just the right kick to start my day. Will make again.

Fantastic! Just the sort of satisfying thing I want in the morning. This allowed me to finish up all the quinoa I had in my house (I'm in major cleanup mode.) I might try it with another grain. I have barley and couscous that I'd like to try to finish--I'm leaning toward the couscous.

this was surprisingly good, I had doubts because I don't care for oatmeal or anything mushy like for breakfast but this was ok and I will probably have it again!

to the previous post -
i have been cooking quinoa in half soymilk/half water for months.  i refrigerate it overnite, and the next morning just add more soymilk like cereal:)  im sure it would taste just as fine if you cooked in all soymilk tho.  good luck!

has anyone ever tried cooking quinoa in soymilk? the thought occurred to me as i was eating oatmeal this morning, wondering if quinoa could be cooked the same way.. as if it wasn't delicious enough already!

It was pretty heavenly, but the peanut butter didn't make sense to my tastebuds at first.  As the warm quinoa blended flavors a bit it was much better - probably better as leftovers - heat it all up together in the microwave.

I still probably won't use peanut butter next time - quinoa is already a complete protein by itself, and, in fact, has the best balance of amino acids of all proteins according to my sources!

Looking at the recipe, it seems to me that the main purpose of the pb is not as a protein source, so much as a source for some essential fats and more calories (ie make you feel full/satisfied longer). For the past several years, I've had trouble with keeping weight on, so recipes like this help me to "sneak" more fat and calories into my diet in a healthy manner.

This was great! Yummy and packed with protein and iron! I didn't even use a splash of soymilk. I was so excited for it that I don't think I let the quinoa cook for quite long enough though, but it didn't even matter. The same recipe works great with oatmeal too.
