Hearty-Healthy Couscous

What you need: 

1 tablespoon oil
1/3 onion, chopped
1 cup Israeli couscous (I like whole wheat)
1 cup veggie broth
1 tablespoon vinegar (I like red wine or apple cider)
1/2 cup water
1/2 green pepper, chopped
1/2 cup tomato, chopped
4 olives, chopped
1/2 cup spinach, roughly chopped
1/3 cucumber, chopped

What you do: 

1. In a medium pot over medium heat, heat up the oil and saute the onions until the onions are clear (4-5 minutes). Add couscous and toast for 2 minutes.
2. Next, add the vegetable broth, vinegar and water and stir until mixture comes to a boil.
3. Aside from the cucumber, throw your veggies (and fruits, if you want to get technical) into the pot: peppers, tomatoes, olives, and spinach.
4. Once the couscous has absorbed the liquid (about 8 minutes), turn the heat off and add the chopped cucumber. Stir, plate and enjoy!
