Healthy Cornbread

What you need: 

nonstick spray
3/4 cup corn meal
1 cup whole wheat flour
4 teaspoons baking powder
3/4 teaspoon salt
1/4 cup molasses
3/4 cup nondairy milk or water
2 tablespoons applesauce
1/4 cup egg substitute (http://vegweb.com/index.php?topic=7678.0)

What you do: 

1. Preheat oven to 350 degrees F. Spray a 9" round baking dish with nonstick spray (or use teflon dish).
2. Sift together corn meal, flour, baking powder and salt. Add remaining ingredients; mix well with a spoon.
3. Pour prepared pan, and bake for 25 minutes, or until golden brown.'

SO HOW'D IT GO?

Intriguing twist on a suothern classic. Having grown up in central Texas and having made many batches of cornbread...I kinda like it. I did an iron skillet cornbread version, sauted peppers, corn, onions, and tomatoes, Left the skillet dirty to give flavor and popped it in the oven. It was more crumbly than usual but that's because the gluten in whole wheat flour is still caught in the shell (ground or not it is harder to extract). Maybe next time I'll try it with just a tad of white flour.

i had no molasses, so i creamed 1/3 c sugar to 1/3 c oil, and just added 2 water for applesauce, and 1/4 c soy milk instead of egg sub.  oh and i more of an equal ratio for corn meal and flour.

it came out really delicious ,  thank you!
