Healthy Apple Oat Wheat Muffins

What you need: 

1 cup rolled oats
1 cup whole wheat pastry flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
1/3 cup sugar
1/2 banana, mashed
1/3 cup unsweetened applesauce
3/4 cup nondairy milk (plain or vanilla soy work well)
1 large apple, peeled and diced 1/2"
1/4 to 1/2 cup walnuts, chopped

What you do: 

1. Preheat oven to 350 degrees F. Line or grease muffin pan. Thoroughly mix dry ingredients (oats through sugar) in a large bowl. Mix the mashed banana and applesauce, then whisk in milk.
2. Mix the wet into the dry ingredients and toss in the nuts and apples quickly. The batter should be rising, very fluffy and wet. Scoop it into prepared pan.
3. Bake for about 15 minutes, but try to take it out as soon as they look done (over cooking makes them a little bit harder, but still just as tasty). If you let them cool before you eat one, they’re much easier to get out of the paper lining.
These muffins are pretty dense anyway, but really, really tasty.

SO HOW'D IT GO?

Delicious! I made these with buckwheat and spelt flour and added in some dates and pecans. Will def be making these again:)

The BEST apple muffins ever.  I followed this recipe exact and they turned out amazing.  I used an unlined muffin tin and then came right out. Sooo yummy.  I am definitely keeping this recipe! ;)b

These muffins are yummy. I followed the recipe exactly except in my oven they took 20 minutes to bake. I'm already planning to bake another batch.

Simply adored the chunks for apples  ;)b
Sprinkled tops with cinnamon before baking and they came out delicious

I just made these! Can't wait to get them out of the oven to eat. I did do a few changes. Insted of 1 cup aots I did 1/2 cup oats and 1/2 bran. And insted of 3/4 soy milk I did 1/2 soy milk and then added water to that to make 3/4ths. =D they look grate!!!

yummmmmm I added raisins, a sliced pear, pumpkin seeds, ground flax and wheat germ! VERY GOOD! I also only added 1 tbs of sugar because of all the fruit! Thank for the yummy recipe!

these are excellent.  i didn't think they would be sweet enough for me with just 1/3 cup sugar, but i was pleasantly surprised that the apple chunks made them just sweet enough. i used a fuji apple.  except for using regular whole wheat flour and 1/4c pecans, i followed the recipe exactly and didn't have any problems. i even got exactly 12 muffins.  they did take a bit longer than 15 mins to cook.  they rose nicely and came out of the pan easily without liners.

healthy, moist, dense, DEEEELICIOUS!  Great for breakfast on the go!  This basic recipe has good possibilities... I bet you could sub blueberries... chunky banana's, etc. to it.  Thanks. ;)b

Followed the recipe exactly, which is unusual, and they were great!  I like how chunky they are....weird and delicious.  I was afraid 1 tbs was too much cinnamon, as I am not a fan, but it was just right.  Yum, yum!
