Health Freak Lemon Muffins

What you need: 

1 cup whole wheat, spelt, or other flour
1/4 cup all purpose flour
3/4 cut oat bran
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt, optional
1/4 cup poppy seeds, optional
3/4 cup nondairy milk (I use soy)
2 egg replacers (http://vegweb.com/index.php?topic=7678.0)
1/4 cup vegan margarine
5 tablespoons lemon juice
2 teaspoons grated lemon zest

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Lightly oil muffin pan. In a large bowl, mix flours, oat bran, sugar, baking soda, baking powder, salt, and poppy seeds.
2. Add egg replacers along with the rest of the wet ingredients to the dry mixture. Mix!
3. Pour into prepared muffin tin, and bake for 10-12 minutes.
These aren't so much a "health freak" muffin as they are ones that just use better flours than most do.

SO HOW'D IT GO?

ehhh these didn't come out very edible. I subbed all the flour for "white" whole wheat flour and used applesauce for the egg substitute, and used an agave/brown sugar blend for the sugar, and a few more tbsps of lemon b/c i didn't have lemon zest. They came out extremely dense and not very tasty. But that might have been due to all the substitutions. I'll try this recipe again (with less subs) and see how it turns out!

There's no oil in these so I'm not sure where that's coming from.. But yes you can use soo sauce for the 1/4 cup of margerine

is it possible to replace the canola oil and egg replacer with just apple sauce?

the oil you could sub apple sauce the egg replacer i would do a ground flax seed and water... here is how: http://www.theppk.com/veganbaking.html i know it is on vegweb here somewhere too... i don't think you could just do apple sauce for both

very good. Could have added even more than 5 Tbs of lemon zest!!  :)

oh i forgot a couple things hehe.. i was so caught up in how delicious these are..

i had to cook them for a little bit longer than 12 mins (prolly around 18) but i only have a toaster oven, and i did use soursop instead of soymilk, so that could be it..

also, you were spot on when you said it makes 15 muffins.. cuz it makes exactly 15 muffins  ;)b

i didnt have wheat flour but i did have a bunch of ground oatmeal (basically oat flour) so i used 1 cup oat flour, 3/4 cup white flour and 1/4 cup wheat germ

also, i had a bunch of soursop pulp that needed using and since it tastes like lemon-pineapple i used that instead of soymilk and for the liquid of the eggs

i used 1 teaspoon baking powder and 1 tablespoon cornstarch for the eggs and i used coconut oil instead of margarine

and i love lemon flavor too so i used 5! teaspoons of zest (hey you said more or less hehe) and the full 5 tablespoons of juice and a little more than 1/4 cup of poppy seeds (cuz who wouldnt use poppy seeds?.. they are so good!).. oh and i added a little vanilla to it too, since i didnt use soymilk

but man are these good.. fluffy lemony heaven, basically.. thanks for an awesome recipe!  :w00t!:
