Hash Browned Burrito

What you need: 

2 tablespoons oil
1/4 cup onion, diced
1/4 cup bell pepper, diced
1 cup frozen hash browns
1 large tortilla
1/2 cup vegan cheddar cheese, grated
ketchup, to serve
hot sauce, to serve

What you do: 

1. Heat a heavy cast iron pan (large enough for the tortilla to fit in) to medium-high. Add oil, onion, pepper and hash browns. Brown on 1 side, turn and brown the other. Slide mixture onto a plate.
2. Place the tortilla in the pan and spin it around in the rest of the oil for a few seconds then flip it over.
3. Quickly sprinkle the cheese evenly over it add the potato mixture, ketchup and hot sauce, to taste. Slide out onto the plate, roll it up and eat immediately.

mm, so simple & delicious..! i changed it up a bit by adding red peppers as well as green, and i used fresh potatoes to make hashbrowns instead of the frozen kind. i seasoned with salt & pepper, cheddar & mozzarella flavored vegan cheese, and sugar-free ketchup, all in a corn tortilla. so tasty!!
