Hanukkah Latkes

What you need: 

3 cups freshly mashed potatoes
1/2 cup all-purpose flour
1/4 cup onion, diced
1/2 teaspoon salt and pepper
canola oil, as needed for frying

What you do: 

1. Combine potatoes with flour, onion, salt, and pepper.
2. Heat oil (about 1/2") in a large skillet to medium-high heat.
3. Shape potato mix into patties and fry in hot oil until brown, about 2 minutes on each side.
Drain on paper towels and serve hot with horseradish.

SO HOW'D IT GO?

This did not turn out well for me. I wasn't sure if "freshly mashed potatoes" meant simply bare potatoes smashed up or as usually prepared (vegan milk and butter plus other good stuff for flavor) so I made it my way then added the onion and flour. The patties totally fell apart while cooking and the onions in the middle didn't cook. Maybe I need a pro to show me how it's done, but I was very disappointed.

Sorry to be the first person and not post a positive review. I made these with homemade mashed potatoes. I had to add at least an extra 1/2 cup of flour as they would have been too runny for the frying pan. Also, 1/2 a tsp of pepper would have been way too much! I'm glad I rethought it and only put in 1/4 tsp. Next time I will saute the onions before mixing and will most likely use potato shreds instead of mashed.
