Half-Way Mashed and Fried Potatoes and Veggies

What you need: 

6 small red potatoes
2 to 4 tablespoons vegan butter, divided
1/4 green pepper, diced
1/4 red onion, diced
2 cloves garlic, diced
4 cremini or white mushrooms, diced
1 teaspoon paprika
1 teaspoon chili pepper
1/2 teaspoon turmeric

What you do: 

1. Boil the potatoes until done. While the potatoes are boiling, melt 1/2 the vegan butter in a pan. When the butter is fully melted, throw the vegetables in the pan and fry for about 10 minutes.
2. Add the paprika and chilli pepper. Fry for another 10 minutes. Once the potatoes are done, drain and add them to the fried mix and start slightly mashing up with fork.
3. Add the rest of the vegan butter. Add the turmeric and continue mashing until you get the consistency you like. Fry for another 15 to 20 minutes.
I serve mine with Orzo pasta that I mix vegan butter and parsley with. It's delicious!
Source of recipe: I get creative sometimes and throw in stuff in a pan which I think would be amazing. I realized I am good at that.
