Guacamole and Refried Bean Quesadillas

What you need: 

Guacamole:
1 small avocado
1/2 medium tomato, diced
1-2 spring onions (scallions), diced
1 tablspoon fresh cilantro/coriander
1 Small red chilli chopped, or a splash of chilli sauce
juice of 1/4 of a lime
a pinch of salt/pepper (optional)
Quesadillas:
2 Tortillas
Vegan refried beans - enough to cover 1 tortilla
Pre-made Guacamole
oil for frying (optional)

What you do: 

To make the Guacamole:
Remove the avocado pulp from the skin and mash it in a bowl with a fork.
Add the rest of the ingredients and stir until nicely mixed together.
For the Quesadillas:
Spread a thin layer of refried beans over the whole surface of one of the tortillas.
Top with the guacamole, spreading into another thin layer on top of the refried beans.
Place the other tortilla on top and press down lightly to make sure it sticks together.
Bring a large flat frying pan to medium heat. I usually fry these dry without any oil, but oil makes them lovely and crispy.
Fry on one side until lightly browned. Flip using your hand or a plate, and fry the other side.
Remove to a plate and cut into triangles.

Okay, so I've eaten these three times in the past three days, and I am in LOVE with them (with the addition of cabbage, vegan jack cheese and tomatillo salsa for dipping,)
Best recipe ever!  ;D

These were fantastic, though I made some changes:
I used whole spelt tortillas, refried black beans, fresh cabbage, some premade guacamole (only a little) then some Follow Your Heart brand vegan Monterey Jack flavoured "cheese"
The cheese didn't melt very well, but I'm going to try putting it right on the tortilla next time, as opposed to the middle.
I guess I was so excited by the package claiming that it melted, I forgot it wasn't like regular cheese.
Anyway, these were so darn good.
I ate them with some home made tomatilla salsa, also from this site (http://vegweb.com/index.php?topic=7100.0)
Wonderful recipe, will most certainly make these again!

:)>>>, Fell head over hills for this easy recipe, even had to break out the rita.  Very easy!  Just learning the ropes around the kitchen, this made me feel like a pro.  Just a note, this makes just enough for two, I'm taking the leftovers to work.  Thanks for the recipe!
