Ground Veggie Burger Casserole

What you need: 

1 cup dry rice
2 cups boiling water
approximately 1 cup shredded vegan cheese substitute
2 tablespoon olive oil
2 packets of ground veggie burger or 2 crumbled veggie burger patties
1 clove of garlic, minced
1 tablespoon onion powder

What you do: 

Prepare Rice. When the rice is done, put the olive oil in a large skillet and brown the crumbled veggie patties or the grounf veggie burger. When browned, add the garlic and onion powder. Then add the rice and vegan cheese. Mix until all the vegan cheese is melted and its gooey. This is a really good recipe for anyone missing Hamburger Helper and such...Its been a lifesaver at times!

SO HOW'D IT GO?

I made a variation of this last night. I used cooked brown rice and taco flavored tvp that I rehydrated. Instead of adding in plain water, i used some salsa and water. I also sauteed a whole onion with the tvp. It was a good quick meal!

Oh, also, I didn't add in any vegan cheese, but I could see it being good with a nutritional yeast cheese sauce added in!

Not bad overall! I've never had Hamburger Helper before, but I would imagine that this is similar.

Instead of onion powder, I added half of a medium white onion, plus two cloves of garlic. To spice it up, I threw in some cumin, red pepper, parsley, and Mural of Flavor from Penzey's Spices. Since I'm not vegan, I used a blend of real cheeses, and it turned out very well. This is a very filling, quick meal. Thanks for the idea!
