Grilled Guacamole Sandwich

What you need: 

1 avocado 1 teaspoon lemon or lime juice 1/4 teaspoon cumin 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon salt pinch black pepper 1 tablespoon diced jalapeno (from jar or fresh) 1/4 tomato, seeded and diced 4 slices of bread vegan margarine vegan mayonnaise (I use Vegenaise)

What you do: 

1. Guacamole: Add avocado pulp to a small bowl. Add lemon juice, cumin, garlic powder, onion powder, salt, and pepper. Mash with a fork to desired consistency. Add jalapeno and tomatoes. Mix with the fork. 2. Butter one side of a piece of bread with margarine. Place it in the frying pan (without heat). 3. Coat the other side of bread with vegan mayonnaise. Place guacamole on the mayonnaise slide of bread. Coat the inside slice of another piece of bread with veganaise and place it on the guacamole. Then butter the top with vegan butter. This will all help your hands and countertops stay clean! 4. If your frying pan is big enough, then you can now prepare the second sandwich before turning on the heat. Turn on the heat and fry until golden brown, flip, repeat, and eat! Source of recipe: This recipe was inspired by the Grilled Avocado Sandwich on this site. When I read it I immediately thought "wow that would taste good with my guacamole recipe".

I made this and added some tofu to my sandwich to get the protein in and used butter on both sides of bread instead of mayo.  Delish!  Thanks so much!  Now I can have healthy guacomale instead of buying that crap in a packet from the store.

I've got to try this--I do grilled avocado with just plain old avocado in the sandwich, but this sounds much more spectacular!

This recipe looks really nice! I'd use a sandwich grill instead of a frying pan tho! I prefer pressed sandwiches better!
