4 tablespoons olive oil
basil, to taste
salt and freshly ground black pepper, to taste
1 firm, medium sized eggplant, peeled and sliced
1. Place olive oil and spices in a shallow, large bowl. Place each piece of eggplant in and turn to coat both sides.
2. Place slices on a grill, turning only once during grilling.
3. Serve with any sauce you like or just eat plain. They are delicious.
