Grilled Avocado Sandwich

What you need: 

4 slices sandwich bread
vegan butter, as needed
whole grain mustard, to taste, optional
vegan mayo, to taste, optional
1 large ripe avocado, sliced thinly (I like Hass)

What you do: 

1. Spread the buttery spread on one side of all the bread slices. Place one slice, buttery side down, in a preheated frying pan over medium-low heat. If you want to add vegan mayo, mustard, or other "dressings" now is the time!
2. Otherwise, lay the avocado slices from one half of the avocado on the bread, covering well. Place another slice of bread, buttered side up, on top. Let cook 3-5 minutes, or until the bottom is golden to your liking.
3. Carefully flip the sandwich over and grill the other side 3-5 minutes. Repeat the above to make the second sandwich.
This is best when you have a really fatty, good avocado (like Hass). If you use a Florida or other "low fat" or "wet" avocado the flavor is still there but it isn't as good, in my opinion. This goes well with soup.

SO HOW'D IT GO?

This is fantastic! I think adding onions and tomato is the way to go, in addition to the mayo.  I used spicy mustard, and some cheddar cheese goes great on it too, but is by no means necessary.  I ate this 3 days straight after dicovering this recipe Laughing

I eat one similiar to this, but I just put the bread in the toaster, then mash the avocado on it and add red onion and bean sprouts

I do the same thing!!! Love it!

Yum.
I made mine a bit differently- with two slices of bread, half an avocado, two slices fake turkey, and some Diaya fake cheese. And instead of butter on the outside of the bread, I used olive oil and grilled it in our panini press. But it was this recipe that inspired said sandwich.
It was fantastic! So good. Mmmmmmm. I can't wait to make it again! (Probably tomorrow :D )

Made these again last night, wheat bread, veganaise, sliced tomato and a sprinkle of garlic salt :)>>> I even made one for my omni co-worker, and he said he would be veg if he could eat food like that all the time!

I sing this sandwich's praises to everyone who will listen, and anyone who says they couldn't give up cheese. After it is grilled I peel the sandwich apart and put a handful of sprouts in it. Red onion and mustard are a must! Once I ate this for days on end, at least 2 meals a day. :)>>>

So quick and simple, but SO good. I've tried it with both the mustard and mayo, and with hummus. Added lettuce and tomato. Yum!

This was great.  Light and delicious.  I didn't have mayo, so I used ranch dressing.  I didn't have grainy mustard, so I used regular mustard.  Didn't have regular bread, so I used hamburger buns.  Added tomato and lettuce.  Very good. ;)b.  Next time I'll add cheese and sprouts (instead of lettuce)

similar to my very favorite sandwich, possibly my favorite meal ever, and it's soo simple

the one i make is basically just two slices of sprouted whole grain bread (like Ezekiel, or their english muffins), toasted until they're very dark, then mash half and avocado in a bowl, spread it on either halves of the bread, and then the most important part.. sprinkle them with a little bit of coarse, crystally sea salt, i use Maldon

delicious! best thing in the world :)

sometimes i'll add a couple slices of a good ripe juicy tomato.. lately i've been using the heirlooms in season, so good
