Green Spagetti

What you need: 

1 (10 ounce) package chopped spinach
1/4 cup imitation chicken broth
2 tablespoons olive or canola oil
1 pound medium spaghetti
1/2 cup vegan grated parmesan cheese
1/2 cup nondairy milk (I use soy)
2 tablespoons vegan sour cream, optional

What you do: 

1. Heat/cook spinach in microwave or on stove top in broth. Add oil to boiling water and cook spaghetti according to package directions, until tender.
2. Blend (in vitamix or other blender) the spinach with remaining ingredients.
3. Serve green sauce over drained spaghetti.
Presto; your kids love eating spinach!!

SO HOW'D IT GO?

This was SO tasty! My husband and I ate it all and licked the bowls clean :-D We very slightly modified the recipe by using plain yogurt instead of sour cream (we're vegetarian), and by adding a few tablespoons of nutritional yeast. We ate this over quinoa noodles--so delicious and a perfect recipe for us pregnant ladies to get lots of iron :-)
