Green Pea Spread

What you need: 

1 can tender sweet green peas (14-15 oz) not the cheap, tough, big green ones but the
tiny, deluxe kind.
2 tablespoons vegan "mayonnaise"
1 tablespoon ground flaxseed (optional)
2 tablespoons finely minced sweet onion
1/4 cup finely minced celery or 1/2 teaspoon celery seeds, crushed
1/4 cup sunflower seeds or pine nuts
seasoned salt (Lowry's has no msg)
black pepper

What you do: 

Thoroughly drain canned peas. In bowl combine drained peas, minced veggies, flaxseed, mayonnaise and seasonings. Stir well, mashing slightly. Stir in seeds (I have used roasted and raw sunflower seeds, and pine nuts--all are good and you can experiment.)
Refrigerate overnight if possible.

SO HOW'D IT GO?

This was really good!  I mashed up some peas and left the rest whole, tossed in some vidalia onion and vegan bacon bits and pine nuts.  I only seasoned with salt and pepper.  We ate it on some rosemary bread I had laying around....very tasty! I also left out the flax seed because we were in a pinch for time, but I may add it next time. I'll also try the celery next time =-)
