Green Pasta with Grilled Tofu

What you need: 

1/2 pound of angel hair pasta
1 cup frozen peas
2-3 cloves fresh garlic, minced
3 tablespoons olive oil
8 oz. tofu cut into 2 inch squares, thinly sliced
1/8 cup fresh cilantro, finely chopped
1 tablespoon dried basil
1/4 cup thinly slice green olives (no pimento)
salt and pepper to taste

What you do: 

This is a fast and easy dish that costs very little to make. Note that this dish is as much about the presentation as the taste and convenience.
It is preferred that you have a George Foreman grill to grill the tofu. Howe'ver if you don't, a broiler will work just fine.
Coat the tofu with one of the tablespoons of olive oil.
Cook the pasta according to directions on package. Immediately divide and transfer the pasta onto two serving plates...making haystacks on each plate. Set aside.
Throw the tofu on the grill, or in the broiler. Grill/broil until just golden brown, but still a little eggy. Throw on 1/2 of the cilantro over the tofu and grill/broil until it is just a vibrant green.
Arrange the tofu on the serving plates around the haystacks of pasta.
Finally, heat the remaining olive oil in the same pan you used to cook the pasta. Add the garlic, basil, and the peas and saute until the peas are cooked, being careful not to brown the garlic (adjust heat if necessary).
Pour half of the peas on the top of each haystack. Top with the sliced olives and toss remaining cilantro over the plates of food. Salt and pepper to taste.
The peas look very striking alone on top of the pasta. Now you have a beautiful, low budget meal to satisfy both you and your guest. Tasty, too.
