The Green Machine Salad

What you need: 

1 cup spinach
1 cup arugula
1/2 cup cucumber, diced
1/2 avocado
1/4 cup green pepper, diced
1/4 cup green onion
1/4 cup celery, chopped up
hemp seeds, to taste, optional

What you do: 

1. Put all your veggies into a bowl, avocado last.
2. Give it all a good mix so it is not in big clumps and so that most of the veggies come in contact with some avocado.
3. Sprinkle with hemp seeds, if desired.
I don't add dressing because the avocado is a good substitute. I have a hard time finding dressings without huge amounts of sodium anyway. I like the green theme here - I haven't yet done this with asparagus or broccoli but I am sure they would be nice additions.

SO HOW'D IT GO?

This needs no more than a little olive oil and lemon juice to dress it. I don't have hemp seed but as I don't know what they taste like I don't miss them.
