Green Goodness Slow-Cooker Soup
3 to 4 quarts vegetable broth or stock
16 ounces green split peas
2 large carrots, diced
1 medium yellow onion, diced
1 small yellow pepper, diced
4 garlic cloves, chopped
1 small bunch parsley, chopped
1 to 2 teaspoons herbs de Provence
salt and pepper, to taste
Add all ingredients in slow cooker and let it cook 3 1/2 to 4 hours, or until the split peas and vegetables are soft. Enjoy!
