Greek Orzo Salad

What you need: 

water
1/2 pound orzo pasta
2 medium tomatoes, diced
1 cucumber, peeled and diced
1/3 red onion, chopped
12 kalamata olives, minced
1-2 big handfuls fresh spinach, destemed and torn
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 tablespoon olive oil
1/2 cup vegan feta
large handful flat leaf parsley, chopped
large handful fresh mint, chopped
1/2 teaspoon salt and pepper

What you do: 

1. Bring pot of water to boil. Throw in orzo and let cook 8-10 minutes or until al dente. While the water is boiling, add all your veggies to a bowl.
2. Add all the wet ingredients and stir well. When the orzo is done, drain it and toss it first with the "feta" to distribute it's texture.
3. Add everything else and mix well. Serve warm or cold. Have a bowl for dinner with a nice glass of red wine.
