Great Key Lime Pie

What you need: 

1 (12 ounce) package silken firm tofu (I use Mori-Nu), drained
1/2 cup key lime juice (I use Floribbean brand)
8 ounces vegan cream cheese
2 teaspoons grated lime zest
2 (3 3/4 ounce) packages vanilla pudding mix (I use Mori-Nu Mates)
1 tablespoon liquid sweetener
1 9" pastry or graham pie crust

What you do: 

1. Blend tofu and lime juice in a processor (may be too stiff for your blender) until creamy and smooth.
2. Add the rest of the filling ingredients, and blend again until smooth.
3. Pour the mixture into the crust and chill 2-3 hours or until firm.
Sets up very firm.

SO HOW'D IT GO?

stupid question because some of the comments confused me.  Do you just put the pudidng mix in as mix or do you make the pudding then add it?

This was super super tasty but it did NOT slice or come out of the pie pan easily. And it chilled for longer than recommended I'm going to stick it in the freezer.

Ahhhh, this is heavenly!  I always just use regular limes as they are cheaper and easier to find than key limes.  Such an easy recipe and so delicious.  It never really sets that firm for me, so I am always tempted to just serve it as a pudding or mousse instead of pie.  The taste is so good that it doesn't matter that it's not as solid as you might expect.  Anyone know of a homemade version of Mori-Nu Mates vanilla pudding mix?  I'd like to make my own mix for cost savings and so I didn't have to run to the HFS to make this...

I used Jell-O vanilla pudding mix instead (http://www.peta.org/accidentallyVegan/VeganShoppingQS-Baking.asp?Category=Baking), and it's delish!

Mine also seemed a bit pudding-y, so I added 1 t of agar to help it set nicely.

I used meyer lemons instead of key lime, and the flavor came out fantastic.  However, I accidentally bought silken soft tofu instead of firm, and used a different brand of pudding, so the pie came out kind of melty.  Oh well.  Next time I'll know better.  Thanks for sharing anyway.

I made this for Thanksgiving and it was GREAT! I am not vegan, so I used organic cream cheese instead of the soy cream cheese. I also used maple syrup for the liquid sweetener. It was really awesome! No one knew it was vegan and they were all very impressed. I sliced the leftove key limes and used them to decorate the pie. I can't wait to make it again.

I made this for the first time today and it was so delicious!!! Wow. We have had a key lime pie at a local vegan restaurant, but this one is so much better. Will make this again for sure. Thanks!!! :)

WOW this stuff is AMAZING!  I am the WORST vegan chef, especially when it comes to desserts and this turned out perfect.  I didn't have any key lime juice, so I juiced 4 regular limes and added 1 tbs. maple syrup, as someone suggested earlier and then I added two more tbs. of maple syrup later on when you put all the ingredients together.  I also added a few pieces of fresh mint and it gave it a great flavor.  I cannot wait to make this for my non veg friends and fool them!!  My boyfriend, who doesn't even like key lime pie, loved this stuff!  My crust had been in the freezer for too long and tasted gross, so we just left the filling in a bowl and eat it as a pudding...it's so good.  i can't wait to make it with a graham crust, yum!  ok, enough raving, really, this stuff is just delicious!!  ;D
