Grandmama's Butter Beans

What you need: 

1 (16 ounce) package frozen baby lima beans (very important to use baby lima)
1/2 teaspoon salt
1 tablespoon sugar
2-3 tablespoons vegan margarine (I use Earth Balance)

What you do: 

1. Put frozen baby lima beans in small pot. Cover with water.
2. Add the rest of ingredients and cook on high, while stirring, until margarine is melted.
3. Cover and cook about 15 minutes on low. Most of the water should be absorbed into the beans when they are done cooking.
We eat these at Thanksgiving with our Tofurky, as well as with cutlets (vegan pork chops).

SO HOW'D IT GO?

I loved these, especially with the sugar! I added a tiny bit of lemon juice, sauteed some onions, and some cayenne pepper to make it pop a bit. Will definitely make this again!

I never new I liked butter beans, but these are great.  I like everything spicy, so I added cayenne pepper and garlic.  very easy and cheap meal!
