Grammy Cooks Banana Bread

What you need: 

1 1/2 cup whole wheat pastry flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons flax seed meal (ground in the blender)
2 tablespoons corn meal
1/4 cup oil
1/2 cup cane juice crystal or sucanat or combination
1 cup mashed bananas
1/2 cup water
1/2 cup chopped walnuts or pecans, optional

What you do: 

Mix first six ingredients well.Mix next four ingredients well.Mix both together and stir in nuts if you want.
Pour into sprayed loaf pan and bake at 350 for 45-50 minutes.
I have tried many banana bread recipes on VegWeb and have yet to taste one as good as my moms. So I got her recipe to share and here it is!
She is the BEST COOK in the world! She can make anything taste good!

SO HOW'D IT GO?

This bread is phenonmenal although I couldn't detect the cornmeal texture that some of the reviews mentioned.  I didn't have any flax, so I omitted this ingredient and I added only 2 tablespoons of sugar since I didn't want an overly sweet bread and since my bananas were all brown and sweet as they were.  The result was a moist, delicious bread loaf that I desired.  Next time I will add more sweetner than 2 tablespoons if I want more of a dessert bread. I cut this bread into 17 slices, wrapped them in plastic wrap, and froze them.  I calculated each slice to be 82 calories which is awesome for this delicious and flavorful bread!  This bread is soooo good warm and probably even better with a generous spread of PB! 5 stars to Grammy!  :)

I have this in the oven right now and I'm really optimistic because of the rave reviews it's gotten.  If I didn't destroy it with my additions (wheat germ and applesauce) and a few omissions, it's coming with me to a party tomorrow.  I'll let you know how it turned out!

YUM!!! This is very different from "normal" banana breads - less cakey and sweet. Its a nice change of pace. I even added a light glaze, and it still wasn't very sweet, but in a good way. I'll definitely keep this recipe so I can alternate with sweeter banana bread recipes. Thanks!!

like everyone else said it was wonderful! I made the following modifications: I used 1/2 c. w.w. pastry flour, 1/2 c. oat flour, and 1/2 c. quino flour. I replaced the oil with applesauce, I used a 1/4 c. raw sugar for the sweetener, and I used two average sized bananas. i will surely be making this again and again and again!

Mmm, this is the best banana bread recepie i've tried yet!
I didn't have any corn meal, so I just doubled the flaxseed meal, worked fine.

I made this tonight for my friends birthday on Sunday and it smells delicious! I added a pinch of stevia to make it a cake, doubled the recipe and put it in a 9" x 13" cake pan. It came out of the pan so well. I am going to put chocolate frosting on it. Tomorrow I will make one times the recipe in a mini muffin tray and frost them for chocolate banana cupcakes.

Wow, the reviews don't lie: this was the best banana bread I've had in a long time! I added a healthy shot of cinnamon and a pinch of nutmeg, and topped my loaf with carob chips and walnuts. Next time I think I'm going to mix these toppings right into the batter. I used "normal" sugar and doubled the cornmeal because I didn't have access to flax meal. Very hearty and the cornmeal is really the secret ingredient. I'm going to start adding it to all of my muffins and breakfast breads. Thanks for sharing this!

This recipe was really good. I made a loaf and muffins!  I used rice dream instead of water and they still came out great.  Will be making again and again and again....

This turned out wonderful! I used canola oil for the oil, added a tad more flour along with a tablespoon of a liquid egg replacer I have, put in some walnuts, and used regular white sugar (we didn't have anything else). Most vegan baking recipes don't work out for me but this one wasn't just easy to make, it smells good and tastes amazing!!
