Good for Transitioning to Raw Greens Sandwich with Olive Oil Dressing

What you need: 

2 slices of whole wheat bread, toasted (farmer's market kind is best)
2 leaves of kale, folded
carrots, sliced
cremini mushrooms, sliced
red pepper, sliced
cucumber, sliced
tomato, sliced
alfalfa sprouts

Dressing:
olive oil, to taste
lemon juice, to taste
crushed garlic, to taste
cayenne pepper, to taste

What you do: 

1. Dressing: Blend together olive oil, lemon juice, crushed garlic, and cayenne pepper. Spread onto toasted bread.
2. Pile ingredients onto bread, starting with kale, followed by sturdier ingredients like carrots and mushrooms, and so on. (Sometimes I use chard instead of kale or red onion instead of sprouts.) ENJOY!
I find this sandwich great for someone transitioning to the raw foods diet because the sandwich doesn't include cooked hummus or soy. Its main ingredient is kale, which is what a lot of raw foodists consider a major source of protein and vitamins. I hope to replace the bread with napa cabbage leaves one day but am not ready to do so just yet!

SO HOW'D IT GO?

I will try this with some other sort of greens like mustard or chard. I like kale, but can't digest it raw. I think there are things that you can do to it to break it down a little without cooking it, but I'm not sure (maybe fermenting or something) Anyone got any tips? Thanks:)

Being as I am already a raw foodist and no transitioning is necessary, I nixed the bread and used romaine to wrap the veggies up.  I shredded the kale and carrots and small diced everything else and voila...nice raw lettuce wraps.  I also tossed in some chopped avocado because everything is better with avocado in it!  :)

I don't see any ingredients that seem esoteric! I think it looks like a great recipe and I will be giving it a try!

Hmm, I guess I'm spoiled by my local co-op.  I assumed these ingredients would be available at most places - maybe not of high quality, but at least existent.  I suppose kale and alfalfa sprouts can be a little harder to find.  You could substitute spinach instead.

maybe it's just me but there are some really esoteric ingredients in this one.

Esoteric? Really? I wasn't aware that alfalfa sprouts were used in magic... ;) They may be hard to find where you live, but the ingredients really aren't all that unusual. We don't have kale here but I wish we did. I'd definitely try this sandwich!
