Good Hot Chocolate

What you need: 

2 tablespoons sugar
Cinnamon, to taste
1 teaspoon cornstarch
2 cups soymilk
3/4 ounces vegan dark chocolate

What you do: 

1) Mix the sugar, cinnamon and cornstarch in a saucepan. Add enough soymilk to mostly dissolve the sugar. Heat on medium low, stirring every thirty seconds or so.
2) Break the chocolate up a bit and add it to the sugar mixture when it starts to get warm. Let the chocolate begin to melt. Stir vigorously until mixture appears smooth and hot. Add the rest of the soymilk and stir well and frequently until warm enough. Pour into mugs and consume.

SO HOW'D IT GO?

This sounds really similar to the mexican hot cocoa I make.  I get the spiced chocolate at the supermercado, and then I just heat a wedge in 1 cup of almond milk and blend it until smooth... So good!
