Golden Wholemeal Pancakes

What you need:

3/4 cup wholemeal flour
1/4 teaspoon salt
1/2 teaspoon baking powder
enough soy milk to make a smooth batter - maybe 1 cup, not too sure
1 golden kiwifruit
1 orange
4 tablespoon orange juice
1/4 cup of golden syrup or any vegan syrup

What you do:

Just made this for brekky today and now I'm craving some more...YUM!
Put the flour, salt and baking powder in a bowl. Add enough milk, whisking till a smooth batter forms.
On a hot griddle, put a ladle of the batter and turn pan around so that batter covers the surface and is as circular as you can get!(like you do for pancakes) ;-P
Let it go lightly brown, flip over and let the other side go brown as well.
Make all pancakes this way (You can pop the ready ones in the oven below, just to keep warm)
While you wait for the pancakes to be done, you can slice the orange removing all the peel and as much pith and membranes and seeds as you can. Peel and slice the kiwifruit as well. Keep aside.
In a small saucepan, put the orange juice and syrup and stir to melt and slightly reduce- around 4 min. To serve, put one tablespoon or so of fruit in one pancake, fold over and drizzle some fruit syrup. Repeat with all other pancakes. YUMMMM!
