Gingerbread Pancakes

What you need: 

1 cup flour
1 tablespoon baking powder
pinch salt
2 tablespoons sugar
1/2 teaspoon cinnamon
1 teaspoon ginger
1/8 teaspoon nutmeg
1/8 teaspoon powdered cloves
1 cup soy milk
2 tablespoons oil
2 tablespoons molasses (I used "light" molasses)

What you do: 

Mix the dry ingredients together in a medium bowl. Make a well and add the wet ingredients. Stir until to major lumps remain... some small ones are fine.
Heat a small frying pan over medium heat (use oil if you're not using non-stick... these pancakes are a little stickier than usual). Add about a 1/4 cup of batter to the pan, swirl, and let cook until bubbles form (and stay) in the center, about 2 minutes. Flip and cook on the other side.
Repeat with the rest of the batter.
Enjoy!
* These pancakes also tend to cook a little faster than regular pancakes... keep an eye on them so they don't burn!* They wind up with only a light molasses flavor; add more to taste if you desire.

SO HOW'D IT GO?

These were awesome!  Used almond mikl instead because that's what I had, and they were so yummy!

;)b Thanks for the recipe!! These were very yummy indeed! I found mine did not stick to the pan as warned which was a bonus. I made them for Shrove Tuesday today. Lovely warm spicy flavour!  ;)b

very very easy, and absolutely amazing. i made waffles instead, since that's my preference. i can't even begin to describe how madly in love i am. followed it exactly except for omitting salt, nutmeg (bad nutmeg experience, i can't stand it now, heheh) and 1 tablespoon of molasses since the kind i have is pretty intense. i think next time (because there will definitely be a next time! there will be many next times.) i will also cut the sugar by half. beautiful!

Yum! They are a little stickier and they do cook quickly, but are so worth the effort! Perfect combination of spices. I didn't even need syrup with these  :)

These were marvelous! Who says pancakes need eggs? I subbed applesauce for the oil, and they still came out great!

This is a great recipe.  I made them tonight and they came out great.  Very light and delicate even though I used an organic blackstrap molasses instead of light molasses.  I usually don't care for plain pancakes but these had just the right amount of spice to interest me.  I served them with applesauce and the taste together was really yummy.  Next time I may try sauteed pears with them.
