Ginger Lemon Matcha Muffins

What you need: 

3/4 cup wheat flour
3/4 cup white flour
1/2 cup soy flour
2 teaspoons baking powder
2 tablespoons matcha green tea powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup vanilla soy, rice or coconut milk
1/2 cup (8 tablespoons) vanilla or lemon soy yogurt
1/3 cup (6 tablespoons) coconut oil
1/3 cup sugar
juice of 1 lemon (~1/4 cup)
handful of flax seeds
1 tablespoon fresh ginger, grated or minced
1 teaspoon (heaping) lemon zest
1 teaspoon vanilla

What you do: 

1. Combine the first 7 ingredients (flour thru salt) in a bowl and set aside.
2. Combine the rest of the ingredients (milk thru vanilla) in another bowl.
3. Add wet to dry, then put the batter into a prepared muffin tin.
4. Bake at 350 degrees F for 25 to 30 minutes, or until the muffins are firm to the touch. Let cool and serve! Yum!

SO HOW'D IT GO?

Oh my goodness-I made these years ago and my friends are STILL talking about the "algae muffins." So good! I passed this recipe along to my friends, and will be making it again very soon since I restocked my matcha supply! Thank you for this delicious concoction!!! :)
