Ginger Dressing

What you need: 

1/2 cup purified water
1/4 cup chopped onion
1/4 cup chopped carrot
2 tablespoons chopped celery
2 tablespoons peeled fresh ginger or more
Blend smooth.
1/4 to 1/2 cup soy sauce/ tamari
1/3 to 1 cup peanut oil
1/2 cup vinegar ( I like cider)
1/2 teaspoon fresh ground pepper
1/4 teaspoon xanthan gum
1/4 teaspoon dry mustard
optional: 1/4 teaspoon chipotlé or other chili

What you do: 

This should take 5 minutes to set up and five to finish.
Blend the first five ingredients smooth.
Add the second list of ingredients. Blend well.
Shake well before serving. (If it separates.)
Best made the day before, so the flavors meld together.
