Garlicky Spinach Baked Potatoes

What you need: 

1 potato
1 clove garlic
1 teaspoon soy sauce
1/4 cup olive oil
1 tablespoon dried basil or 1/4 cup fresh basil
2 cups spinach

What you do: 

1. Preheat oven to 425 degrees F, and bake potato 45 minutes-1 hour, until pokable with a fork but not quite done.
2. Toss garlic in the blender with soy sauce, oil, and basil until minced very small. Add spinach and blend until finely chopped.
3. Take potato out, cut it in half lengthwise. Scoop out the insides and mix them in a bowl with the spinach mixture. Mix it by hand so the potato will be chunky.
4. Scoop this mixture back into the potato skins and put them back in the oven for 30-45 minutes.

SO HOW'D IT GO?

Ooh, I forgot to mention that it seems like a lot of oil!  I don't really know what the purpose of it is....you could easily use half of the oil called for and still have a yummy filling.

These were a yummy way to eat some spinach!  However, I think a couple of changes could be made to the recipe.  First of all, I was planning to double the recipe since I had two large potatoes.  So, I started out with 3 cloves of garlic and 1 TBS soy sauce, but as I was mixing everything together it seemed like I had a lot of filling!  I ended up not doubling the spinach or basil and it came out tasting great. 

It does make plenty of filling.  I filled 4 halves and had some leftover.

Overall, these were fairly easy to make.  I think they would be a great finger food for a potluck or event.  They refrigerate well and taste good at room temperature.

I finally got around to making this, and I'm so glad I did! I make 4 smallish potatoes, and blended 4 cloves of garlic with about half a bag of frozen spinach, and just estimated the amount of oil and herbs to use. When I popped them back in the oven, I laid a piece of Follow Your Heart mozzarella cheese on top. They were so yummy, I will definitely be making these again!
