Garlicky Quinoa with Chestnuts and Toasted Pine Nuts

What you need: 

2 cups vegetable broth
1 tablespoon lime juice
1 cup canned chestnuts, sliced and cut in half
1/2 medium red onion, chopped
3 cloves garlic, minced
1 1/3 cup quinoa, washe'd 3X and rinsed until water is almost clear
1 tablespoon minced, fresh cilantro
3 tablespoon pine nuts, toasted in a dry skillet
salt to taste

What you do: 

In a medium saucepan, steam-fry the chestnuts and onion with lime juice and 1 tablespoon of the vegetable broth until tender. Add the garlic and cook one more minute. Add the rest of the broth and bring to a boil. Add washe'd quinoa and return to a boil. Cover. Lower the heat and simmer for 12 minutes. Add the cilantro, pine nuts and salt to taste. Stir. Cover and remove from heat. Let stand 5 more minutes. Fluff with a fork and serve warm or chilled.
