Garlic and Spinach Pasta

What you need: 

1 cup water
1 cup nondairy milk (I use soy)
2 tablespoons margarine
1 cup pasta (shells are best)
1/3 cup nutritional yeast flakes
1/4 cup lemon juice
1/2 cup fresh spinach, chopped
parsley, to taste
salt and pepper, to taste
3-4 medium sized mushrooms, chopped
1 medium sized onion, chopped
garlic, chopped, to taste

What you do: 

1. Combine water, milk and margaine in a pot and bring to a boil. Add pasta, nutritional yeast, lemon juice, spinach and seasonings. Return to a boil and let simmer.
2. Saute mushrooms, garlic, and onion in 2 tablespoons water. Add vegetables to the pot and simmer until sauce reaches desired thickness.
3. Cover and let stand for 3 minutes, then serve.'

SO HOW'D IT GO?

Oh man, I wanted to try this one, but everything is in ml!  I will have to check my measuring cup to see if it has ml on it.  I know, I know, the rest of the world works in metric, and the US just HAS to be different.  I wish we would go to metric too, but I know cups, that is how I was raised sorry.    :(

This was great - wanted thirds, but ran out! I worried about the amount of nutritional yeast, and actually cut it back by 1 tbsp., but it was fine. I added some dried bull kelp seaweed - yum, and about twice the amount of spinach. Next time I'll add even more, as it seemed to get lost.
