Garden Broccoli Salad
2 cups fresh broccoli with stems, chopped
1/4 cup sunflower seeds
1/4 cup chopped dried fruit (raisins, apricots, etc)
1 whole sweet red bell pepper, chopped
1/4 red onion, minced
1 finger-sized piece of fresh ginger
1/4 olive oil
3 cloves garlic
2 teaspoons dried dill
Chop the broccoli (use the stems!), dried fruit, onion and red pepper and place in a large mixing bowl.
Make the dressing: Peel and seed the cucumber, and chop into chunks. Peel the ginger and slice.
Place cucumber, ginger, dill, garlic, olive oil and salt and pepper in a blender until smooth.
Toss the dressing and veggies together. This is best if it sits overnight in the fridge.
