Garbanzo Tacos

What you need: 

2 (15 ounce) cans garbanzo beans (1 can, drained)
1 (1 1/4 ounce) packet vegan taco seasoning
lettuce, shredded, to taste
6 large tortillas or 12 hard taco shells
tomatoes, chopped, to taste
onions, diced, to taste
salsa, to taste

What you do: 

1. Dump both cans of beans into a skillet (but use the liquid from only one can). Dump in the taco seasoning.
2. Stir and let simmer for about 10-15 minutes.
3. Add beans and other ingredients to your tacos, burritos, and/or taco salads.
Especially good recipe for those who aren't crazy about the flavor of garbanzo beans. The seasoning takes over.

I fixed these tonight in a time crunch, and they were wonderful. My "meat and potatoes" roommate loved them too. I added a little lime juice and garlic into the mix while they were simmering. Excellent!!

These were so great. Such a wonderful, cheap, better alternative for packaged soy crumbles! Loved it. The beans keep well in the fridge, too  ;D I'm using the rest for a bean dip since they're awesome on their own. And to think, before I made these I wasn't a fan of garbanzos, thanks!

yum yum yum! i cooked up onions and peppers in a sort of fajita mix, added avocado and fresh lime and cilantro! holy yum!

i didn't have any garbanzo beens so i used white kidney beans (cannellinis) and they still came out pretty good... probably better with the chickpeas though since they're less mushy.

Recently became veggie, tried this for lunch today and it was great! I have a 1 year old and she liked eating the messy garbanzo beans with her hands. The taco seasoning that I've been using for a while now (including pre-veg) is an organic vegetarian mix, the brand is called "Simply Organic"... it's pretty good. Thanks for a great lunch!

I made these garbanzo tacos for my husband and I tonight. I used diced tomatoes, Tofutti sour cream, shredded Nacho flavoured Follow Your Heart brand vegan cheese, and bottled taco sauce. He had soft tacos and I had hard shells. They were both delicious. We were really surprised at how great they tasted. My husband said they were even better than soy crumble tacos.

Delicious tacos!  This is a wonderful alternative to tacos with soy meat.  The dish is super simple to make.  I suggest checking sodium content on the taco mixes.  I found one that was vegan, but it turned out a little on the salty side.  Next time, I'll look for a low-sodium taco mix or just make my own.  In addition to shredded salad mix, tomatoes, and onions, I also added taco sauce and Tofutti sour cream.
