Frozen 5-Fruit Pie with 5-Nut Crust (Gluten Free)

What you need: 

3 cups raw five-variety nut blend- I usually use the following:
cashews
macadamias
almonds
sunflower seeds
pistachios, if you can find them raw
1/2 cup raisins (or dates)
2 tablespoons raw tahini
5 cups five-variety fruit blend, fresh or frozen - I usually use the following:
1 or 2 bananas (overripe is better) - 1 or 2
raspberries
blueberries
strawberries
orange juice

What you do: 

1. Prepare the crust:Place the nuts, raisins, and tahini into a food processor and blend/pulse til the mixture starts to stick together. Empty the crust mixture onto a 9" pie pan and press it out & up the edges of the pie pan, using your fingers to pack it down.
2. Then prepare the filling:Replace the food processor, add the fruits of your choice and blend til smooth. (Try to get a good combination of fruits, so taste as you go and adjust the proportions of individual fruits. You could use the ones above, or maybe mango, mulberries, cherries, figs, avocado, persimmons, blackberries, citrus zest, whatever strikes your fancy. I like the sweetness & fluffy consistency that bananas add, and recommend them for the mix.)
3. Pour the fruit filling into the nut crust, and freeze at least a couple of hours, until ready to serve. Remove from freezer for a few minutes before serving. This could be beautifully garnished with some fresh fruit slices, or berries on top, or mint leaves.
