Friendly Zombie Cupcakes

What you need: 

1 1/2 cups all-purpose flour
1 cup vegan granulated sugar
1/4 cup shredded coconut
1 teaspoon baking soda
1/4 teaspoon salt
1 cup water
1/3 cup oil
1 tablespoon vanilla
1 tablespoon white vinegar
1/2 cup cherry pie filling or "red" jam, divided
1 recipe vanilla glaze (listed under frosting)
powdered sugar, to garnish

What you do: 

1. Preheat oven to 350 degrees F, and line a cupcake tin. In a bowl, combine flour, sugar, coconut, baking soda, and salt. In another bowl, combine water, oil, vanilla, and vinegar. Combine wet and dry.
2. Fill each liner just under 1/2 full with the batter. Spoon about 2 teaspoons (a small spoonful or so) of the pie filling/jam into the middle of each cupcake.
3. Cover with more cake batter until the liner is full, but not overflowing. Bake for about 25 minutes; start checking after 15 to 20 minutes (my oven is a bit special and my cook times are always a little off).
4. Once the tops are just brown and a toothpick comes out clean, remove from oven and let cool all the way. Once cooled, make the vanilla glaze, and dust with powdered sugar.
You can decorate with chocolate chips, dried fruits, nuts, more coconut, or anything else that looks tasty. When you eat these friendly zombies you will find a surprise inside-their fruity brains! Finally, a sweet revenge. You have a friendly zombie cupcake that you can eat the brains of!

I added food coloring to the batter to give my zombies some color and I used blueberry jam (no "sinking jam" problems either). 

Although these were too cute (I love my GREEN zombies with PURPLE brains and PINK icing lips!), they were WAY too sweet.  I would reduce the sugar by half if I made them again.

I made these with jam in the middle. I didn't use muffin liners though and that was a big mistake, the bottoms stuck to the pan and the jam did too, it was a sticky mess. They still tasted so yummy though.    ;D

I made these with whole wheat flour and sucanat ( I think I added a touch extra liquid because of this) and they turned out really tasty :) All the omni's at my hubby's family Halloween party thought they were muffins (they were doubly dark with the sucanat and the whole wheat)... but oh well. I used strawberry jam and only put about a 1/2 tsp or so when I had already filled the cups 3/4 full, then put a small dab of batter over them, and they didn't sink to the bottom. I also tried leaving some uncovered, and as long as you don't fill the cups too full they do leave some awesome ghosty mouths like a prior posters' did (my first batch I filled the cups too full and the batter baked right over it anyway!) I also used her idea for chocolate chip eyes and they were just the right sweetness to add to it all. I must note, however, that you should definitely wait until serving to dust them with the powder - I made these the day before, and by the next day the sugar had all sunken in, and I even put on another layer but by party time it was all gone again. Also, I used applesauce instead of oil (like with the super moist chocolate cake recipe) and they turned out great. Thanks for the great recipe and ideas!  ;)b

These are the most delicious cupcakes!!!  :D Very moist and super-tasty.The coconut gives it a nice touch and texture. I made these for the Farm Sanctuary Halloween fund raiser that I am attending tonight. I hope I can restrain myself from eating any more until then. 

I made two batches and used Hero brand strawberry jam for cupcake filling. For the first batch, I filled the cupcake molds with batter then dropped in the jam. The jam did not sink to the bottom, or even to the middle, contrary to an earlier comment. It did however create a cool hallowed out look that I thought resembled a scary mouth.

For the second batch, I filled the cupcake molds to the half point with batter, added a small amount of jam (maybe 1/2 tsp) , then topped it with a little more batter--stopping when the molds were 3/4 full. This resulted in cupcakes that did not have jam stuck to the paper, but also didn't have it floating on top. The jam was perfectly centered.

I decorated the tops with powdered sugar and 2 chocolate chip eyes, and (for the second batch) I used jam piped through a pastry bag for a mouth.

i was sooo excited to make this because of the whole zombie thing
(it made me think of the movie evil dead, which was really ridiculous)
but!
i had the same problem with the jam (i used homemade strawberry) going to the bottom and making the cupcakes impossible to get out of the paper.
they tasted pretty good though.
i just wish i could get that filling to stay in the middle...
otherwise, great recipe and cute pictures!

I made these with strawberry preserves in the middle, but it went all the way to the bottom and stuck to the liners.  :( :'(  And because of that, the cupcakes aren't coming out clean. I wonder why this happened......any answers? ???

humm, i didn't have this problem. i know/think that the jelly doughnut cupcakes (VCTOTW i think-- they had the recipe online for a story in vegnews) said to fill the cups and then put the jam on top and that it would "sink into" the cupcake. perhaps try that? i made these with cherry pie filling so it was more "chunky"-- perhaps that is why it worked out?

i'm definitely making these for my birthday. as adam said zombies + cupcakes = oh yeah!!! Oh god, i sound like the kool-aid man......
