The Friday Club

What you need: 

3 slices of bread
vegan mayonnaise (I use Vegenaise.)
extra firm tofu - 1 cm sliced lengthwise
1/2 avocado
1 tomato
baby spinach leaves - as much as you desire
salt and pepper - to taste
1 tablespoon oil

What you do: 

-Warm your oil in a frying pan on medium heat.
-While oil warms up, slice about 1 cm of tofu (lengthwise). Sprinkle salt and pepper to taste on both sides.
-Fry your tofu on both sides...be sure not to over cook until crispy!
-While tofu fries, prepare your other ingredients. Slice your tomato into thin slices, peel the stems off the baby spinach leaves and slice your avocado.
-Start toasting bread.
-Once bread is toasted, spread Vegenaise on each side.
Now, it's time to construct your masterpiece:
-bottom slice of bread, then-avocado, then-tofu, then-2nd piece of bread, then-tomato, then-lettuce, then-last piece of bread
You can omit the middle slice of bread or add tomato and lettuce to tofu and avocado OR you can add vegan cheese. Be creative and have fun!
