Frenzy Tahini Dressing

What you need: 

2 tablespoons white sesame seeds
1 teaspoon oil (olive, sesame, other)
1 clove garlic, roughly chopped
1/2 teaspoon cumin
1-1/2 fresh lemon juice, or to taste
1 baby handful unsalted sunflower seeds
1 smaller than baby handful nutritional yeast, or to taste
pinch fresh grated nutmeg
pinch salt, or to taste
pinch pepper, or to taste
up to 1/2 cup water, more or less to your desired consistency

What you do: 

I came up with this looking for some sort of dressing to have with my falafels. I was in a bit of a hunger frenzy when making it, so the measurements might be a little off. But I loved it SO much, I just had to share! Go with your instincts on this one. You're gonna wanna do this in a Magic Bullet (it's what I used) or a small blender/food processor. This is because the amount of sesame seeds is pretty small and I find they don't get blended properly in my food processor (as per experiments making real tahini).
Now that you have established which shiny kitchen instrument you will be using to make this delicious dressing, let's get started!
1. Put your sesame seeds, oil, and roughly chopped garlic in. Give it a good whiz to get everything started up. Scrape down the sides; it will be thick and pretty dry.
2. Add remaining ingredients, starting with a splash of water. Give it another good whiz. At this point you're going to have to fly by the seat of your pants. Taste and adjust seasonings to your liking as well as add more water or lemon juice until you get to your own favorite consistency. I like mine relatively thick because I like to dip things in it, spread it and I just like the general "creaminess" of it. However, to throw it on a salad you may have to thin it out quite a bit. Whatever works for you!
Now that I think about it, this may be yummy and healthy with added flax seeds in the first step. This recipe seems pretty versatile so experiment and tell us about it! Enjoy!
