French Toast

What you need: 

2 tablespoons vegan mayonnaise (I use Vegenaise)
1/4 cup nondairy milk (I use soy)
1/4 teaspoon vanilla extract
1/8 tablespoon cinnamon
nonstick spray or margarine
4 slices bread

What you do: 

1. In shallow bowl or pie plate, whisk together vegan mayo, milk, vanilla and cinnamon.
2. Spray skillet with nonstick spray or melt a little margarine in it, put over medium heat and bring to a sizzle.
3. Quickly dunk each side of a slice of bread, using side of fork to scrape down excess back into plate. Fry in skillet a few minutes, flip and fry other side.

SO HOW'D IT GO?

Okay, I've been going back and looking at recipes I've posted. I have no idea why but t. keeps getting uploaded as T. In this recipe it should read 1/4 t. vanilla and 1/8 t. cinnamon.

This was delicious. Like Towergirl, I never much cared for the egg taste with french toast, but it was still sounding good this morning. We didn't have all of the ingredients on hand that other french toast recipes called for, but we had all of these - it was quick and easy and I'll definitely be making this again. Thanks for sharing!

I thought this would be icky because of the veganaise but this was excellent. I never liked french toast even when I was a vegetarian because I didn't like that egg taste but now that I'm vegan I was craving it of course and it was a success!  I didn't have any soymilk so I used rice milk instead and it worked out just fine. Thanks for the recipe!
