Forbidden Rice Pudding

What you need: 

2 cups forbidden rice (the lovely black/purple stuff)
2 cups almond milk (or other fake milk)
1/4 teaspoon Stevia powder
1/3 cup dried cranberries
1 tablespoon chopped crystallized ginger
1 tablespoon agave syrup (if you like it pretty sweet)

What you do: 

Mix all in a heavy sauce pan.
Simmer on LOW heat until the liquid is absorbed. About an hour.
It will continue to absorb after taken off heat, and even thicken up a bit as it cools.
I like to just leave the pan over the back burner of the stove while I cook something else (there is a vent from the oven there and that is plenty of heat to cook this).

SO HOW'D IT GO?

OOPS!!  I should have noted that this is LEFTOVER COOKED rice!!!  Otherwise the 2cups of liquid would not be enough.
