Feel Good Kale Sauce with Pasta

What you need: 

3 to 4 servings pasta (I like Angel Hair)
1 carrot
1/2 onion
2 large kale leaves, large stems removed
2 garlic cloves
2 tablespoons olive oil
salt and pepper, to taste
1/2 cup unsweetened or plain nondairy milk (I use soy)
1/3 cup nutritional yeast

What you do: 

1. Cook your pasta according to package directions. If you do this simultaneously, you can have dinner ready in 12 minutes or less. Drain, when done.
2. While the pasta is cooking, put the carrot, onion, kale leaves, and garlic cloves into the food processor to create a pulp. It shouldn't be a liquid, but just very pulpy and small little bits.
3. Heat the olive oil in a pan, and add the vegetable pulp. Saute it for about 5 minutes, and add salt and pepper as you cook it. When it is heated through, pour the milk into the mixture and allow it to get hot and a little bit bubbly.
4. Add the nutritional yeast, and mix it in and keep cooking it. You can add more milk if you would like a thinner sauce. Add salt and pepper to taste. Mix sauce with drained pasta.
This sauce is delicious mixed into pasta, and I feel good every time I eat it (which is about once per week). My kids prefer it as a side dish. All the omnis I have served it to like it as well!
Source of recipe: Hoopy~D gave me the idea for this sauce, and I have run with it and make it all the time! It's my go to recipe because I usually have all of the ingredients on hand.

SO HOW'D IT GO?

NOM! I guesstimated on all the amounts and I am pretty sure I used way more "milk" cause it kept evaporating in the pan. It does give you lots of energy!

This was really good!  I used a little more kale than the recipe called for because I had some kale to use up.  I mixed it up with some whole wheat spaghetti.  I think next time I will use some earth balance instead of oil to make it a little healthier.  Really good recipe!

I think olive oil is healthier than earth balance (which has palm oils and is highly processed). Olive oil is very pure and is high in omegas.
I'm glad this recipe is getting so much play lately!!!

this is my favorite kind of recipe--fast, easy, healthy, and of course, delicious!

only change i would make is to maybe cut down on the nutritional yeast next time, but i thought it was still awesome as is. i'd also double the sauce to have enough for 4 servings of pasta. im sure it's flexible as far as what veggies you want to throw into the mix. yum

I made a double recipe and added a 16-ounce can of tomatoes. It WAS quick and easy. I didn't like it much, but my partner did. I didn't care for it - thought it was way too bitter - but he liked it a lot. I served it with penne (what I had), but angel hair would have been much better I think. I might make this again, but adding more tomatoes or even tomato sauce to combat the bitterness.

This was delicious! Much more flavorful than I had expected it to be. I'm not really a pasta person so I used spaghetti squash instead, it was amazing! Thanks for sharing! ;)b

I made this for the first time and found it really easy and delicious. I added tomatoes when I tossed it with the pasta and next time plan to add yellow squash, broccoli, and zucchini. I added dulse flakes instead of salt so that I got extra iodine without all the sodium. This is a good recipe if your are vegan since it includes foods that are nutrient rich where vegans tend to be lacking. Thanks so much for sharing!

;)b This is yummy! I added portabella mushrooms to mine (not in the food processor). I also used yellow squash instead of a carrot.i squeezed a tiny bit of lemon juice into hte sauce once i turned off the heat. thanks its yummy yum yum.

2 thumbs up from the whole family. The kids are asking me to pack this for their school lunch.

This is such a simple recipe! And it tastes wonderful. I added a couple of chopped roma tomatoes to the pasta. It all had such a great flavor. I can't wait to play with this one more.
