Feel-better No-chicken Soup

What you need: 

1 to 2 tablespoons olive or vegetable oil
1 small onion, chopped
5 cups water
1 vegetable or vegan chicken-flavored bouillon cube (or 4 tablespoons of powdered broth)
3 to 5 tablespoons nutritional yeast flakes
1/2 tablespoon garlic powder
pinch or 2 celery salt
1 bay leaf
1/2 teaspoon turmeric
salt and pepper, to taste
all-purpose seasoning, to taste
1 small carrot, grated or sliced thinly
1 stalk celery, sliced thinly against the grain
leaves from the stalk of celery, chopped finely (optional)
1/4 cup filini noodles ( or alphabet pasta)

What you do: 

1. Fry onion with oil in small frying pan until beginning to brown. In medium size pot, add bouillon cube to 5 cups water and stir.
2. Add nutritional yeast, garlic powder, celery salt, bay leaf, turmeric, salt and pepper and all-purpose seasoning. Stir until dissolved. Add the fried onions, carrot, celery, and celery leaves. Bring water to boil.
3. Add filini noodles once water starts to boil, and time according to directions on package, usually 6 to 8 minutes. If noodles or carrots are not tender, let pot stand with lid on for 10 minutes. Serve but do not eat bay leaf. Feel better!
You can add chopped faux chicken to this recipe, if desired. The appearance of the soup is very similar to "Lipton's" and is perfect for those days when you are feeling under the weather or just plain cold.

SO HOW'D IT GO?

its ok, i like that it uses alot of nutritional yeast so its probably full of vitamins but as for the taste its just ok.  its a great basic recipe and could play alot with this.

Thank you. This was amazing and definitely made me feel better during my cold. I didn't have celery salt or all-purpose seasoning and it still turned out great. I used alphabet pasta and next time I will probably use 1/3-1/2 cups.

I modified the blank out of it, but I got the "essence," of the recipe, and I love what's going on in here.

;)b Very good thank you! Only thing different I did was shredded  some chicken tenders strips in and some quinoa instead of rice as some others suggested.  :>

This soup is really really yummy! Thank you so much for sharing this recipe. I've never seen Lipton's soup (I'm from Australia) but his really does taste like the instant chicken noodle soup of my childhood, the one straight from the packet, the homebrand stuff xD Bringing back some really nice memories for me :)

I made some slight changes, nothing major : added in 1 diced zucchini, ramen noodles broken into small pieces, and diced celery. I didn't have any celery salt, but I figured adding some chopped celery would be tasty too. I didn't add turmeric because I didn't have any, and my soup is plenty yellow without it! :D

Now I don't need to buy cup noodles anymore! I've found my perfect recipe to curb those cravings too. Am going to have fun experimenting with this to make 'chicken cup noodles' also :)

;)b  I made this tonight and was pleasantly surprised how well it tasted.  I hadn't cooked with nutritional yeast before, but I liked the flavor it added.

My customizations:
- 1 extra stalk of celery
- 1/2 t. Bragg's Herb & Seasoning mix
- 3 heaping T of nutritional yeast
- Cooked all in one pot - first saute onions with salt and pepper, then added celery and carrots; then move to broth mixture, boil and add seasonings, then finally pasta.
- Used approx. 1/2 c. pasta - elbows
- Used 1 1/2 cube of vegan vegetable bouillon cubes

Next time:
- I'll reduce the onion to about 1/4 c. chopped or slightly more
- Add more veggies, like corn, cauliflower, or zucchini

Overall a warm and filling meal.  Serve with warm sourdough rolls on a cool night or when feeling down.  It was quick to make (less than 30 min for all) and easy to prepare.  Almost all items I already had in the pantry.  Thanks for a great recipe to satisfy "chicken soup" cravings. :)

I made this on Sunday but used no chicken broth instead of the water/bullion combo.  I'm not a great cook and it was easy and so good.  Always loved lipton "giggle noodle" soup as a kid, this was a dead-on copy! Added shredded gardein chickn scallopini at the end.  My 2 1/2 year old gobbled it up. I've passed the recipe on to anyone who will listen.

DELICIOUS! i made a few modifications since i'm not a celery fan, i didn't use any, also i don't have chicken flavored bouillon, just veggie, so i used 1 1/2 cubes, i cooked the onion(and 2 cloves of garlic) in the pot then added the water. i also cubed some tofu and threw it in(uncooked and unmarinated). YUM! this was sooooooooo good, the nutritional yeast was a perfect touch! thanks for sharing!!

glad you liked it so much! the shredded chicken sounds like a great idea. I'm not a fan of the big pieces, so I never usually add chicken at all, however I'll have to try shredding them next time.
