Fatfree Cornbread

What you need: 

1 cup cornmeal
1 cup flour
4 teaspoons baking powder
1/4 cup sugar
1 teaspoon salt
1 tablespoon Ener-G egg replacer
1 cup fatfree nondairy milk (I use soy)
almost 1/2 cup unsweetened applesauce

What you do: 

1. Mix it all together just until it is completely mixed.
2. Put it in a non-preheated 450 degree F oven.
3. Bake 20-25 minutes. I did 20 minutes, because I like mine real moist in the middle, almost not done. '

oh goodness, this was so good! used wholemeal flour, had no applesauce so used an extra teaspoon of orgran egg replacer and a little less sugar but it was so very good. It was all gone before I finished dishing up the rest of the meal.


This was so good! I subbed almond milk for soy and used 1/2 cup of wheat flour instead of all white to add some protein content- which didn't make this any less yummy!  I was wondering what it would be like if I did the whole cup wheat flour?
(Also subbed some agave nectar for a tablespoon of the sugar)
