Fast and Easy Lentils and Broccoli

What you need: 

1/2 cup enriched long grain rice (I like Uncle Bens)
2 cups of water
1 medium sized head of broccoli
1 cup of water
1 19oz. can lentil soup
pinch of salt
oregano, basil, and parsley to taste
1 teaspoon of olive oil (optional)

What you do: 

Add spices and salt to 2 cups of water, boil, add oil (optional) then add rice. Reduce heat, cover and simmer for about 20 minutes, or until there is very little water left.
While rice is cooking, cut up broccoli to bite-sized pieces, steam over one cup of water, until water is gone or until a they start to soften.
When rice is ready, add lentil soup and broccoli and continue to simmer for about 10 more minutes. Remove heat and let sit for about 10 more minutes, stirring occasionally.
I prefer a think consistancy, if you would like more of a soup, add about 1/2-1 cup more water along with lentils and broccoli. This is an easy recipe that you do not have to stand over constantly, leaving you time to do other things (write papers) and shouldn't cost more than $3. This is great for college students, and also as a pre-workout meal.
