Fantastic and So Easy Stuffed Peppers
6 green bell peppers, halved
6 slices wheat bread, crumbled
basil, to taste
salt and pepper, to taste
1 cup cooked brown rice
1 small onion, diced
2 or 3 tomatoes, diced
6 ounces vegan jack cheese, diced
1/2 pound veggie crumbles
1. Preheat oven to 350 degress Fahrenheit. Place peppers on a baking pan. Using a large bowl, add the bread crumbs, and sprinkle liberally with basil, salt and pepper.
2. Add the rice, onion, tomatoes, cheese, and veggie crumbles. Mix it all together and spoon into the pepper halves.
3. Bake for 30 minutes then check. If the peppers are not as tender as you like (and I like mine tender), bake for another 5-10 minutes.
Any leftover stuffing can go in the oven in small baking dish. Enjoy!
